Fresh Roasted Edamame Salad
Ingredients:
12 ounces Fresh Or Frozen Edamame, shelled (about 2 cups)
½ cup Corn Kernels
¼ cup Red Onions, finely diced
1 clove Garlic, minced
1 tablespoon Olive Oil
¾ teaspoon Kosher Salt
¼ teaspoon Freshly Ground Black Pepper
1 cup Fresh Basil Leaves, chopped
1 tablespoon Red Wine Vinegar
Directions:
Preheat oven to 400 degrees.
Place Edamame, Corn, Red Onion, Garlic, Olive Oil and Salt and Pepper into a 9x13 pan and stir to combine.
Place on the middle rack of oven and roast for 10-15 minutes, until the Edamame begins to brown slightly.
Remove from the oven and place in the refrigerator until completely cool, approx 30 Minutes.
Add the Tomato, Basil and Vinegar to the Edamame mixture and toss to combine. Taste and adjust seasoning, as desired. Serve chilled or at room temperature.
