I just got done making the Mandarin Magic Salad and Dressing. It made for a really good salad and sandwich lunch. I added an extra Tablespoon of the Peach Jam to make it extra sweet and put about 1T. of red onions in the dressing instead of putting them in the salad to keep the flavor but not eat the onions them selves as much. I thought it would also be really good with some candies almonds in it for a little crunch. It was fun to make a new recipe!

I forgot to say, I am going to be making the Marinara Delicious and pasta recipe for dinner tonight. It's fun to look forward to cooking new recipes for a change.

ok, I know I already left 2 comments but the Marinara Delicious recipe is AWESOME! It is a little spicy for my kids but I just didn't put in quite as much red pepper. I am for going to use this recipe again.

Since I am really not very creative, I used all of your recipes for dinner tonight. I have to admit that I had to call Laura and get instructions on how to slice an onion and prepare the garlic cloves. I was surprised that I actually succeeded in making three tasty dishes. All of them were wonderful tasting. I decided to add some chicken to the marinara sauce and it was marvelous. I also added 1 T. of brown sugar to make it a little less acidic. Like Sandy, I though afterwards that a few candied almonds would be yummy for the salad. Even my picky husband enjoyed these dishes. I was proud of myself for eating all of my slices of celery in my salad. The dressing was so yummy. I also turned my Tablespoons of peach jam into heaping tablespoons and it was super good. I am excited to keep using the dressing throughout the next week or so on future salads. Thanks to the Muir Fresh Harvest team for expanding my cooking & eating horizons. I never would have bought fresh garlic, red onions, etc. on my own. I would recommend everyone buy the Fresh Harvest bundle because not only are you getting a great deal on the products but you are getting quality recipes that add some fun to your cooking. Thank you!

The best part of the bundle is someone else does the shopping and finds the recipe for me. Its great because I hate to go to the store. I have tried the potatoes and the marinara with pasta, they both turned out great.

I made the Marinara and Salad tonight for dinner and both were great. Since I wanted to reserve some of the Marinara sauce for Margherita pizza tomorrow night, I didn't add the water to the sauce so it wouldn't be too runny for topping a pizza. I also cut the garlic down some because my husband isn't a big garlic eater, but the sauce was delicious. It was so fun to try a sauce with those tomatoes. I've made homemade marinara sauces before, and none have been as good as with these tomatoes. Thanks, this is lots of fun!

I have made all of the recipes and loved them. It was fun to have some new things for dinner. I used plum jam instead of the peach jam in the salad and it was great. I have also used the squash, onion, peppers and tomatoes grilled and put on homemade pizza rounds for a fun meal. We just topped them with a little cheese and put them back on the grill for a min. I am having fun.

If you want to get really adventurous with your San Marzano Tomatoes, you could try out this recipe!

Margherita Pizza
Directions:
Stretch dough into two thin 9-inch rounds. Top each with 1/2 cup crushed San Marzano Tomatoes, dried oregano, salt, pepper and olive oil. Bake until golden. Sprinkle with 1/2 lb. diced mozzarella, torn basil and salt. Bake until the cheese melts, then drizzle with olive oil.

How to make a pizza:
Step1- Place a pizza stone or a inverted baking sheet on the lowest oven rack and preheat to 500 degrees.
Step 2- Stretch 1 lb. bough on a floured pizza peel, large wooden cutting board or parchment paper.
Step 3- Top as desired, then slide the pizza (with the parchment paper, if using) onto the stone or baking sheet. Bake until golden, about 15 minutes.

Pizza Dough:
Whisk 3 3/4 cups flour and 1 1/2 teaspoons salt. Make a well and add 1 1/3 cups warm water, 1 tablespoon sugar and 1 packet yeast. When foamy, mix in 3 tablespoons olive oil; knead until smooth, 5 minutes. Brush with olive oil, cover in a bowl and let rise until doubled, about 1 hour 30 minutes. Divide into two 1-pound balls. Use 1 pound per recipe.

Enjoy!

I made the spinach salad and it was a huge hit. But the biggest reaction I have gotten so far was when I grilled chicken kabobs using the peppers, onions and yellow squash. My family went crazy for it!! It took less than a half an hour from start to finish, and I have already been asked to make it again as soon as possible. So easy and so yummy. Definitely give it a try!

I know it may sound simple, but I have had the most yummy bacon, lettuce, tomato sandwiches for lunch the last two days. I even planned to go out to lunch today, but couldn't resist the thought of that BLT waiting for me at home. The roma tomatoes & red leaf lettuce came from my bundle. Thanks for making me want to eat at home more.

I got sour dough bread and put fresh cut tomatoes with some mozzarella and parmesan cheese on top. Popped it into the microwave for 30 seconds and added fresh cut basil on top. So yummy!

I also made a mini fruit salad with the kiwis, mangoes and I added bananas. My kids loved it. (and so did I!)

megan said...

Loved the mangoes! They were the best I have EVER had. With one, I made this longtime favorite (except I used halibut this time instead of salmon). http://find.myrecipes.com/recipes/recipefinder.dyn?action=displayRecipe&recipe_id=222892

The kiwis have been a week-long treat too!

Laura,
We loved our bundle and we are continuing to get our fruits and vege's through this great system! Just for info we were weekly customers through bountiful baskets food co-op. We tried this one out and not only did we get double the fruits and vege's they were better quality and they came with specialty items and recipies! We had so much fun cooking everything up and I think we actually ate every thing whereas from bountiful baskets there was always something that went rotten before we ate it up. Thanks so much! We can't wait for the next pick up. Everyone should at least give this a try!

The peppers were hysterical. We first tried some of them in a broth fondue. They were great and the hot ones were not too hot. Next I broiled some with some olive oil and that really brought out the hot ones. If I were to ever play roulette I would for sure lose because I got all the hot ones. My daughter kept saying how good they were until she finally got a hot one. My husband loved them in his salads for lunch. We loved the beets! We roasted them and cut them on top of lettuce for a side salad. I think our favorite thing we did with the bundle food was onion rings. Those big onions were perfect and the 2 of them feed all eight of us.

Simple Margarita Pizza's from last bundle!!
Layer pizza sauce, mozzarella cheese, and roma tomatoes on an individual flat pita. Sprinkle with fresh basil and fresh cracked pepper. Grill for 7-8 min, until cheese is melted and pita is crispy.
Super yummy!!!

Everyone is doing the pizza sauce, mozzarella cheese, roma tomatoes on flat bread or pizza dough. To really make it pop add a little olive oil and balsamic vinegar. It is fabulous.

How sad was I when I forgot to get my order in on time! My cooking these past two weeks hasn't been near as creative or healthy.
Lesson learned!
Thanks for helping our dinners become more exciting!

I didn't order the bundle last time because my fridge was too full. I have missed the fresh fruits & vegis this last week. I think I gained 4 pounds because of not eating the healthier foods. Can't wait for this next bundle.

Jillo, you were not alone! I was too late last time too...got this order in just in time! My kids were so excited when I told then we were getting the fresh mozzarella again. Last time I made it into giant bruschettas (for lack of a better name:) I sliced the Crumb Bros. bread...brushed each slice with olive oil and garlic...toasted lightly under the broiler...topped each slice with tomatoes, chopped basil, and a slice of the fresh mozzarella...back in the oven until the cheese melted...served with balsamic on the side...HEAVEN!!!

Oh yea, and I have to tell you again how much I love all the beautiful photos!

I just got done making the best Creme Brulee ever. I am for sure going to make this again and again and again and again. Oh am I repeating myself? It was a big hit in my family, and it was so easy. I totally took all the credit for making it even though all I did was mix the cream and the Creme Brulee powder together. AWESOME!

I've tried several different food co-ops and this is tops! Everything was incredibly fresh and beautiful--I can't stress this point enough. I have never seen such beautiful produce anywhere--you can't find it in a supermarket. Also everything was clean and I must mention that the tomatillos had the husks removed and were cleaned. Thank you, I loved that!

I have been getting bundles for about 8 months now, and I just want to say how much I love them. It is always beautiful produce, and the specialty items are fun. There is always a nice variety, giving me both what I need and what I want but didn't know it. It gets me out of the rut of buying the same old things all the time. I use the bundle as my inspiration for cooking for the 2 weeks until I get the next one. It makes it fun, and I find it saves me money and time. I don't need to go to the store nearly as often and I always have something in the house I can use to make lunch, dinner, etc. Keep up the good work. I hope to be getting bundles for many years to come.
