Crispy Fingerling Delight
Roasted Banana Fingerling Potatoes

Ingredients:
2 Lb. Banana Fingerling Potatoes
1/3 of a Red Onion, diced
2 T. Roasted, Dried Garlic, or 3 Fresh Garlic Cloves, minced
3 T. Fresh Chives, chopped
Salt to taste
Fresh Ground Pepper to taste
4 T. Olive Oil
Directions:
Pre-heat oven to 400 degrees.
Wash Banana Fingerling Potatoes and slice lengthwise. Place in bowl and set aside.
In a separate smaller bowl, mix together Olive Oil, Chives, Garlic and Red Onions. Pour Seasoning and Olive Oil mixture over Fingerling Potatoes and toss well, coating all the Potatoes. Pour Potatoes into an 8x10 shallow Pyrex baking dish. Salt and Pepper Potatoes.
Bake at 400 degrees until Potatoes are browning. Check at about 30 minutes.
Potatoes should be tender when done. Test with a fork or toothpick.
