Mandarin Magic Salad & Dressing

Spinach & Fruit Salad with Orange-Peach Vinaigrette Dressing

Ingredients:

Salad:

8 ounces Spinach (washed and clipped)

1 cup Mandarin Oranges

1 cup Strawberries, sliced

½ cup Red Onions, sliced

2 stocks Celery chopped

Dressing:

1 Orange, juiced

4 T. Peach Jam

1/3 cup Olive Oil

3 to 4 T. Red Wine Vinegar

Directions:

Place Spinach in bowl. Slice Strawberries, Red Onions and chop Celery. Add to Spinach. Add Mandarin Oranges. Arrange nicely for Presentation.

In Blender mix all ingredients for dressing except Olive Oil. Mix well. Add the Olive Oil slowly. Pour dressing into a Cruet to store. You may have some left over to use at a later date.
