Brussel Sprouts with
Apples and Smoked Bacon

(Serves 4)
Ingredients:
4 slices Smoked Bacon
2 cups Brussels Sprouts, shaved
2 cloves Garlic, minced
½ cup Apples, diced
¼ cup Fresh Herbs including; chives, tarragon & parsley
½ cup Apple Cider
Sea Salt & Pepper, to taste
Directions:
Fry bacon on medium-low heat in a skillet large enough to hold all other ingredients. Cook until crunchy. Remove bacon and de-grease on a paper towel then chop into small pieces and reserve until just before serving.
Reheat the bacon fat and sauté the Brussels sprouts, garlic and lady apple together until tender and bright green (approximately 5 minutes).
Then add the herbs and salt and pepper toss together then remove into a bowl.
De-glaze the sauté pan with cider whisking all the time, until it’s reduced by half, then drizzle the cider reduction over the Brussels sprouts.
Toss the Brussels sprouts in the cider glaze then top with bacon crumbles and serve immediately
