Fresh Baby Heirloom & Avocado Guacamole
Ingredients:
3 ripe Avocados
2 ½ Tablespoons Lemon juice
A few dashes of Hot Pepper Sauce to taste
½ cup Yellow Onion, small diced
1 large Garlic Clove, minced
1 teaspoon Kosher Salt
1 teaspoon freshly Ground Black Pepper
8-10 Baby Mixed Heirloom Tomatoes, quartered
Directions:
Cut Avocados in half lengthwise and remove the pits. Scoop the flesh out of the shell and place in a large bowl.
Add Lemon juice, Hot Pepper Sauce (a few dashes), Yellow Onion, Garlic, Kosher Salt, and Black Pepper and mix well.
Use a sharp knife to slice through the Avocados in the bowl until they are finely diced.
Add Baby Heirloom Tomatoes and toss ingredients together.
Salt and Pepper to taste.
*Serve with Laurie’s Gourmet Buffalo Chips
(You can even warm them a little in the oven if you want!)

This was SOOOOOO good!!! It went perfectly with the chips and salsa last weekend during football on Saturday!
