Simple Rainbow Chard
Ingredients:
-2 T. Olive Oil
-¼ cup Onion, minced
-3 cloves Garlic, minced
-3/4-1 Bunch Rainbow Chard, coarsely chopped (TIP: separate the larger stems from the leaves and sauté these first as they will take a little longer to become tender than the leaves will.)
-1 Lemon, juiced
-3 T. Pine Nuts, toasted, or Shelled and seasoned Pumpkin Seeds (*if you have some left over from a previous bundle.) OPTIONAL
-Sea Salt and Pepper to taste
Preparation:
Heat a large pan over medium heat and add the oil. Sauté the onion and garlic until the onion is translucent then add the greens and allow them to slowly wilt down, stirring occasionally.
Squeeze the lemon over the cooked chard and season with salt and pepper. Toss with pine nuts or pumpkin seeds and serve!
